PROBLEM TO BE SOLVED: To obtain a beverage having improved palatability of rough feeling characteristic of a bean-curd refuse and flavor such as harsh taste, etc., without impairing a nutrient composition and dietary fiber of bean-curd lees, a beverage of bean-curd refuse having a beautiful apparatus by dispersing and stabilizing a bean-curd refuse to be a raw material in a beverage and further a beverage of bean-curd refuse controlling deterioration in a flavor and in a color tone during storage. SOLUTION: A beverage of bean-curd refuse which comprises mechanically cut bean-curd refuse fibers, a water-soluble polysaccharide of a substance between fibers in a matrix composed of the bean-curd refuse fibers, a thickener and water can provide a beverage which not only improves a flavor such as harsh taste, etc., characteristic of bean-curd refuse, exhibits an excellent dispersion stability and betters a palatability such as a rough feeling, etc., characteristic of bean-curd refuse but also controls a sediment and has a beautiful appearance. Further, a flavor deterioration inhibitor is added to the beverage of bean- curd refuse to give a beverage of bean-curd refuse controlling a flavor deterioration with an increase in harsh taste, suitable for preservation. |
