PROBLEM TO BE SOLVED: To obtain a soft, tasty fermented food with good flavor and palate feeling by using wild rice, and to provide a method for producing such a fermented food. SOLUTION: This fermented food is obtained by swelling wild rice with water followed by steaming thus swollen wild rice and adding koji to the thus steamed wild rice to effect fermentation. It is preferable that the above wild rice is such that after harvested, wild rice is directly preliminarily fermented and dried and then lightly roasted. By the way, this fermented food is preferably such as to have been frozen, dried or retort heat-treated. |
