PROBLEM TO BE SOLVED: To provide both a method and an apparatus for processing a raw meat, capable of thickening a protein denaturation layer on the surface of the raw meat and keeping shape retentivity by effectively utilizing heating characteristics of Joule heating and microwave heating, respectively. SOLUTION: This method for processing a raw meat is characterized in that a raw meat in a forming pipe 2 is preheated to a protein denaturation temperature or lower than it by Joule heating based on turning on electricity to the raw meat and the protein denaturation layer is formed at the surface of the raw meat by microwave heating to provide the raw meat with shape retention.
