<p>PROBLEM TO BE SOLVED: To provide a pickled Ume-like artificial pickled Ume (Japanese apricot) having the shape of a natural pickled Ume, having a coated layer like that of a natural pickled Ume and capable of fulfilling a request on the coated layer from soft to hard. SOLUTION: This artificial pickled Ume is an edible spherical one comprising an internal layer and a coated layer; wherein the internal layer is sol or gel-like natural Ume flesh, Tofu (soybean curd) refuse produced in a Tofu production process, or devil's tongue powder, and the coated layer can be optionally changed in its thickness and is a gel with a water content of 50-95 wt.%, and through further changing the water content thereof optionally by drying it after formation, both the coated layer and internal layer are made similar to those of a natural pickled Ume in an appearance, taste and a palate feeling.</p> |
