PROBLEM TO BE SOLVED: To solve the problems of a conventional Welsh onion root cutting device which is used by peeling the undesired peels or undesired leaves of Welsh onion with a high pressure water jet or a compressed air jet, arranging the root of the Welsh onion and then cutting the root with a cutting blade and causes thereby often turbulent flows or further various troubles, because the high pressure water jet or the compressed air jet collide with the cutting blade at a right angle. SOLUTION: The roots 3 of a Welsh onion 1 are brought into contact with a positioning plate 6, and charging side conveyers 5a, 5b are operated to horizontally transfer the Welsh onion 1. A high pressure water jet or compressed air jet are jetted from jet nozzles 9a obliquely disposed in the upper jet nozzle attaching plate 8a and the lower jet nozzle attaching plate 8b to peel and cut the undesired leaves 4 of the Welsh onion 1 between the jet nozzle-attaching plates. The Welsh onion 1 is further horizontally transferred to contact with a vertically movable blade 14 disposed in parallel to the high pressure water jet or compressed air jet. The blade tip is cut into the root hair 11 of the Welsh onion 1, and the root 11 are sequentially cut with the vertically movable blade 14 with the horizontal transfer of the Welsh onion 1. The desired leaves 4 and the cut root hairs 11 are simultaneously washed away and scrapped with the jet flows 12.
