PROBLEM TO BE SOLVED: To provide a rolling mill and rolling method by which excellent coolant removing properties are secured in the whole region from the low-speed region to the high-speed region of rolling speed. SOLUTION: The rolling mill for rolling a rolled stock 1 with a pair of upper and lower work rolls 2a, 2b has: roller type coolant removing devices 4a, 4b which are situated on at least the outlet side of the work rolls 2a, 2b viewing in the rolling direction; tube wiper type coolant removing devices 5a, 5b which are situated on at least the outlet side of the work rolls; and a controller 17 for controlling the switching of an operating state where coolant removing work is performed and a non-operating state where the coolant removing work is not performed.
