PROBLEM TO BE SOLVED: To provide a device and a method for dehyarating sludge, which is capable of holding the water level of a gravity dehydrating part in a prescribed range and surely avoiding the stopping of the supply of the sludge and the overflow with the increase of the water level. SOLUTION: The dehydrating device is provided with a dehydrating vessel 2, a water level detecting means 22 of the sludge liquid introduced in the dehydrating vessel 2 and a rotation control means for controlling the number of revolution of rotary filter bodies 6a-6e and 7a-7j based on water level information S1, S2 and S3 detected by the water level detecting means 22. The dehydrating vessel 2 is constituted so that filter bodies 6 and 7 formed by arranging side by side both plural numbers of rotary filter bodies 6a-6e and 7a-7j formed by arraying many pieces of disks 10 and 11 in the rotary shaft 8 direction to form a coupled array are oppositely arranged in 2 upper and lower stages, a sludge liquid 5 introduced from a supply port 3 is transported while filtering and dehydrating by rotating the rotary filter bodies 6a-6e and 7a-7j and the dehydrated cake 15 is discharged from a discharge port 4.
