PROBLEM TO BE SOLVED: To provide a method for producing a powder-and/or paste-containing oil-in-water type emulsified food, causing no oil/aqueous phase separation without lowering its quality even if the viscosity of the emulsified food is lowered or adjusted and the food is subjected to high-temperature sterilizing treatment. SOLUTION: This method for producing a powder-and/or paste-containing oil-in-water type emulsified food comprises mixedly emulsifying at least one kind of powder and/or paste selected from bean powder and/or its paste, seed powder and/or its paste and tea powder and/or its paste together with an oil and fat, a protein, saccharides, an emulsifier and water, wherein the method is characterized by comprising subjecting the above powder-and/or paste- containing food to cellulase treatment. |
