PROBLEM TO BE SOLVED: To provide a method for producing a protein-zinc readily absorbable by human body and to obtain a drink or a food composition containing the same. SOLUTION: A vegetable protein or animal protein is suspended in water, reacted with a protease at pH 3.6-6.0 for 12 hours to give an oligopeptide, and a zinc mineral ion is added to the oligopeptide being a protein hydrolyzate, which is subjected to a chelating reaction to give a zinc-oligopeptide. The zinc- oligopeptide is concentrated to about 35% solid content, dried and powdered to give a powdery zinc-oligopeptide. |
