PROBLEM TO BE SOLVED: To provide a method for processing fishes by which even the aged, patients or children who cannot crunch small bones can ingest calcium components contained in the small bones. SOLUTION: Fish meat 6 is divided into parts 6B containing bones and parts 6A without containing the bones and the bones in the parts 6B containing the bones are pulverized with an ultrafine particle pulverizer to provide a ground fish meat 6B'. The parts 6A without containing the bones are chopped to afford slices 6A'. The ground fish meat 6B' is combined with the slices 6A' and starch, common salt and albumen are added and mixed therewith. The obtained mixture is then molded and heated. The calcium components contained in the small bones can be ingested and the texture of the fish can be tasted by omitting the labor of cooking without performing troublesome operations to remove the small bones. |
