A process for producing a selemethionine-labeled protein characterized by using a wheat embryo cell-free protein synthesis system, converting methionine, which is contained in a cell extract for synthesizing a cell-free protein obtained by completely eliminating albumen contained in a wheat embryo extract from the embryo extract, into selemethionine, and then synthesizing a cell-free protein with the use of the protein synthesis reaction mixture containing selemethionine as a substitute for methionine under batch conditions or dialysis conditions; and the protein thus produced. Moreover, a process for producing a deuterium-labeled protein by using the same procedure and the protein thus produced are provided.
