PURPOSE: Provided is a method for aging meats which has no smell but soft texture and plain taste, and maintains its freshness for a long time. CONSTITUTION: The method for aging meats contains the steps of: preparing mixed sauce consisting of 3-5 wt.% of pyroligneous liquid, 3-5 wt.% of chitosan extract and 90-94 wt.% of wine; spreading it on meats the vacuum-packing it; and fermenting aging packed meat in water of 0-3 deg.C with hard charcoal.
