PROBLEM TO BE SOLVED: To provide an evaporator in which drain water discharged from a cooler/refrigerator 1 is evaporated thoroughly and low water operation is prevented. SOLUTION: The evaporator 21 comprises an evaporation pan 22 for receiving drain water, a heater 23 fixed to a thermal conduction sheet 23A for evaporating drain water contained in the evaporation pan by heating, a temperature sensor 29 connected with the evaporation pan to conduct heat, and a ventilation fan 24 for discharging steam of drain water in the evaporation pan to the outside. Upon finishing defrost operation of the cooler/refrigerator 1, the ventilation fan 24 and the heater 23 are supplied with power and drain water in the evaporation pan 22 is evaporated by heating, steam of drain water is discharged and then the heater 23 and the ventilation fan 24 are brought into nonconducting state immediately before the drain water in the evaporation pan runs out.
