<p>PROBLEM TO BE SOLVED: To provide a method for producing pickles, by which the pickles having a good taste can be obtained, while saving labors and time. SOLUTION: In this method for producing pickles, a washing operation in a desalting and washing process is limited to about one time, and the salt is removed in a process for pickling a pickling material in a seasoning liquid. Thereby, the pickling material after the above processes can hold salt in some extent to control the propagation of various bacteria in the pickled material, and the outflow of the original juice contained in the pickling material can be minimized to give the pickles having a good taste.</p> |
