PROBLEM TO BE SOLVED: To provide a powder of a shrimp carapace having reduced amine smell while preventing browning and blackening of the carapace of the shrimp such as a stardust shrimp, a northern shrimp, a Japanese glass shrimp, a hardback shrimp, a banded shrimp or the like. SOLUTION: The shrimp is treated with an alkali aqueous solution, and the alkali aqueous solution attached to the treated shrimp is washed or neutralized. The washed or neutralized shrimp is dried and pulverized. The shrimp is subjected to a boiling treatment preceding the treatment with the alkali aqueous solution. The boiling treatment can be carried out after catching the shrimp and washing the shrimp with water, salt water or the like, or after freezing preservation. Even in the case, the treatment with the alkali aqueous solution, and the washing or neutralizing treatment are required to be carried out at the time as soon as possible after the boiling. As a result, a fresh color after the boiling can be kept for a long period as same as the above. The boiling treatment can be carried out in the water or the saltwater. The concentration of the salt water is, for example, 1-10 wt.%, preferably 2-6 wt.%. The neutralizing temperature is the boiling point of the water or the saltwater, and usually 90-105 deg.C. |
