PROBLEM TO BE SOLVED: To obtain a controller or an inhibitor against growth of strain of the genus Alicyclobacillus, comprising 1,5-D-anhydrofructose as an active ingredient. SOLUTION: This controller or inhibitor against growth of strain of the genus Alicyclobacillus is characterized by comprising 1,5-D-anhydrofructose. When the controller or the inhibitor is applied to a refreshing beverage, the amount of 1,5-D-anhydrofructose depends on the a heating condition and is preferably 0.01-10 pts.wt., more preferably 0.1-5 pts.wt. based on 100 pts.wt. of the refreshing beverage. |
