PURPOSE: A method for purifying rice embryo buds is provided to utilize rice embryo buds separated and dumped in polishing rice by pounding as food resources, particularly to produce functional foods and medicines, thereby increasing income of farmers and maximizing utility of producers and users. CONSTITUTION: The method comprises steps of screening and collecting rice embryo buds with 40 to 80 mesh while applying vibration(M1), washing the collected buds with 97% ethyl alcohol(M2), followed by drying(M3), fermenting the buds with yeast and white sugar(M4), drying the fermented mixture using hot air at 75 to 80 deg.C, and grinding the dried mixture(M5). The buds resulting from the method have high contents of protein and fat, and thus are suitable for raw materials of functional foods and medicines. Also, the products are stable in a long storage due to a low rancidity since they are washed and dried.
