PROBLEM TO BE SOLVED: To provide a skinning machine which can prevent the occurrence of a trouble that fats from fishes are adhered and fixed to a blade carrier after the skinning of the fishes and then cause the stay of fillets, the interception of subsequent fillets and the operation stop of the machine. SOLUTION: This skinning machine comprises a toothed roller 35, a skinning blade 40 whose tip is disposed close to the lower peripheral surface of the toothed roller 35, and a carrying belt 32 whose upper carrying side 32a is disposed below a skinning portion and is used for carrying raw materials loaded on the upper carrying side 32a to the skinning portion, and is used for bringing the skinning blade into contact with the skin side of the raw material to skin the raw material in a state that the skin side of the raw material is held on the peripheral surface of the rotated toothed roller. The machine is constituted such that the raw material is pressed to the skinning portion with an upward lifting tension for pressing up the upper carrying side of the carrying belt to the skinning portion, and that water spray openings are disposed on the lower surface of a blade carrier 41 supporting the skinning blade to spray the water.
