PURPOSE: A process for producing the base-decomposing complex enzyme used in the cultivation of a microorganism is provided, thereby effectively culturing the microorganism, so that the efficacy of functional foods can be improved. CONSTITUTION: The process for producing the base-decomposing complex enzyme used in the cultivation of a microorganism comprises the steps of: washing and peeling fruits; cutting the fruits into a size of 7-10 mm, then followed by sterilizing and drying them; dipping the fruits in alkalic solution of 16-21 deg.C for 6 hours, wherein the solution is preferably adjusted to pH 8; washing the fruits with fresh water to remove alkalic solution permeated thereinto; pressing the fruits into microparticles, then followed by adding the microorganism undiluted solution thereinto and cultivating them; drying the cultivated solution and first fermenting it naturally at 35 deg.C for 3-7 days; drying the first fermentate at 60 deg.C for 5 minutes and second fermenting it in a stainless fermentor for 7 days; third fermenting the second fermentate at 30 deg.C for 17 days and freeze-drying it; and pulverizing the freeze-dried white particles into fine powdery particles; inserting the pulverized enzyme powder and adding vitamin and glucose powder thereto; and sealing it.
