PROBLEM TO BE SOLVED: To facilitate maintaining of operability during cooking using heat in food preparation (hereafter cooking) and the cooking with a broiler. SOLUTION: This roaster has a roasting chamber 7 which contains a heater and cooks the materials 11 to be heated, an exhaust cylinder 22 which is communicated with the roasting chamber 7 and discharges the exhaust gas of a high temperature to out of the roasting chamber 7, a door 8 which is disposed in the opening of the roasting chamber 7, a tray 9 which can freely be put into and out of the roasting chamber 7, a clearance 21 which is disposed in the lower part of the contact surface parts of the opening surfaces of the door 8 and the roasting chamber 7, a exhaust cylinder temperature sensor 23 which controls the temperature of the inside of the roasting chamber 7 and a control section 24 in the exhaust cylinder 22. The control section 24 is constituted to control the temperature in the roasting chamber 7 by the exhaust cylinder temperature sensor 23. According to the constitution described above, the high-temperature exhaust gas generated in the roasting chamber 7 flows completely into the air admitted from the clearance 21 and into the exhaust cylinder 22 behind the roasting chamber 7 and therefore nearly represents the temperature in the a regardless of the kinds and sizes of fishes and their positions on a grill. The variations in temperature like heretofore are decreased and the failure in the cooking is lessened.
