PROBLEM TO BE SOLVED: To provide a fryer which can not only merely filter oil to get rid of frying scum but can maintain the freshness of the oil for a long period as well and allows the cleaning in an oil tank. SOLUTION: The fryer 1 for frying and cooking food materials by a batch process within the oil tank 6 is provided with a circulating path having a storage tank 10 for storing the oil in the oil tank 6 and filter devices 11, 12 and 30 for filtering the oil. An electric field is formed in at least part of the circulating path.
