PROBLEM TO BE SOLVED: To provide a method for producing pre-washed/pre-dipped rice, which can produce the pre-washed/pre-dipped rice provided with proper shape-keeping properties over the whole surface layer through improved drying treatment to preserve the shape for a long time, while utilizing various advantages obtained from rice washing treatment which gives high moisture content to polished rice by washing with hot water. SOLUTION: A rice washing treatment part B, by which the polished rice are washed, is constituted in such a way that the polished rice washing treatment is carried out so that the whole rice from the surface layer part to the center part of the rice come to be a high moisture ratio by infiltrating water into the center of the polished rice by use of hot water, a drying treatment part C drying the polished rice washed in the rice washing treatment part B comprises a dewatering device 29 for dewatering by forced movement of the polished rice of a high moisture content washed in the rice washing treatment part B and a drying device 30 for drying the dewatered polished rice. |
