PROBLEM TO BE SOLVED: To obtain a gel-like chitosan formed product having no astringent taste peculiar to chitosan, and palate feeling with elasticity and soft feeling, and hardly getting out of shape, to obtain a food containing the product, and to provide a method for modifying the palate feeling thereof. SOLUTION: This gel-like chitosan formed product is characterized by being obtained by improving the palate feeling through making a mixed solution by mixing water-insoluble polysaccharides which gets viscous on heating with a solution obtained by dissolving chitosan in a chitosan-soluble acid aqueous solution, and through giving viscosity to the polysaccharides by heating when the above mixed solution is subjected to gelation forming in an alkaline solution, and also by neutralizing the resultant gel-like formed product through washing with water. The second objective food containing the product is provided. The third objective method for modifying the palate feeling of the product is also provided. |
