摘要 PURPOSE: Provided is a manufacturing method of smell-free garlic powder using enzyme digestion, thereby using smell-free garlic powder in manufacturing functional foods. CONSTITUTION: The manufacturing method of smell-free garlic powder is characterized by using cellulase and amylase to remove smell components, such as pyroglucose, ammonia and diallyldisulfide. It comprises the steps of: washing and crushing garlic; adding distilled water thereto then stirring at 38 deg.C; adding enzyme, cellulase and amylase thereto; pressurizing it at low temperature then quenching it(twice); concentrating and vacuum drying it; and pulverizing and packing it.
