<p>A process for the production of a vegetable protein biohydrolysate which comprises forming an aqueous suspension of a vegetable protein in an amount of from 5 to 50 % by weight based on the weight of the suspension, adjusting the pH if necessary, hydrolysing the suspension at a temperature of from 50° to 60 °C with a proteolytic enzyme containing proteases, exopeptidases, endopeptidases or glutaminases by incubating for a period of from 8 to 24 hours to obtain a degree of hydrolysis of at least 60 %, heating to inactivate the enzyme and separating the biohydrolysate.</p> |
