PROBLEM TO BE SOLVED: To provide a method for preventing or reducing calcium adherence to a food production equipment without decreasing the degerming or disinfecting effect inherent in burned calcium in using the burned calcium for degerming or disinfecting food or the food production equipment and thereby facilitating the cleaning of the equipment. SOLUTION: This method comprises using a combination of burned calcium with a polyglycerol fatty acid monoester.
