METHOD OF FERMENTATION FOR PRODUCING ERYTHRIITOL BY HIGH-SALT-TOLERANT MUTANT OF CANDIDA BACTERIAL STRAIN

PROBLEM TO BE SOLVED: To provide a method of fermentation for producing erythritol by using a high-salt-tolerant mutant (Candida magnoliae SR101: KCCM-10160) of Candida bacterial strain with high productivity. SOLUTION: This method of fermentation comprises producing the erythritol under the optimum fermentation condition maximally producing the erythritol by optimizing environmental conditions for cultivation, e.g. ingredients of a culture medium, pH, a temperature, an aeration ratio, a stirring speed and the like.
