PROBLEM TO BE SOLVED: To obtain a wheat flour comprising an oil and fat added thereto suitable as Tempura (deep-fried food) flour. SOLUTION: This method for producing the wheat flour comprising the oil and fat added thereto comprises adding 0.1-1.5 wt.% of the oil and fat to a wheat flour, then heating the resultant wheat flour under conditions of 40-90 deg.C and adjusting the moisture content of the wheat flour to 6.0-14.9 wt.%. |
