摘要 PROBLEM TO BE SOLVED: To provide a processed food product from a kind of seaweed in Rhodophyceae: Eucheuma muricatum (Kirinsai in Japanese) that can be obtained by properly dissolving the raw seaweed without any additive, coagulating the solution and can be refrigerated for a long period of time, in addition provide a method of producing the objective processed food product that can produce the objective processed food remaining suitable hardness and texture without adverse effect on the color, taste and flavor intrinsic to the seaweed (Kirinsai). SOLUTION: This invention relates to a method of producing processed food products of Kirinsai (a kind of seaweed) that is characterized by adding water to the raw seaweed at a weight ratio of 4.5-5.5 to 1, stirring the mixture with heat, until the sea weed is dissolved, solidifying the solution by cooling. Further, in the dissolution process, the seaweed is characteristically dissolved by gradually adding the seaweed, as the dissolution temperature is kept in the range of from 55 deg.C to 65 deg.C. In addition, the dissolution process is characterized by dissolving the seaweed so that the fibrous substance may remain in an amount of about 5-10% in the solution.
