PROBLEM TO BE SOLVED: To provide a rice confectionery containg pieces of crushed almond hard to be used because of too much oil and fat content. SOLUTION: The subject method comprises forming mixed rice cake 3 pounded with crushed almond pieces 2 to rodlike shape, covering the periphery of the resultant rice cake with white rice cake 1 followed by refrigeration and then producing rice-cake cube dough 6 through slicing the resultant rice cake so as to arrange a non-mixed part (white rice cake part) 62 on the whole periphery of a crush almond-mixed part (mixed rice cake part) 61, and subjecting the resultant dough to specified drying followed by baking the dough according to the routine procedure.
