PURPOSE: A manufacturing method of green tea noodles is provided, thereby coloring the noodles green peculiar to green tea leaf and distributing gluten evenly. Therefore, the noodle increases one's appetite and has sticky and chewy taste. CONSTITUTION: The manufacturing method of green tea noodles comprises the steps of: mixing 0.5-50 wt.% of powdery green tea, 95 wt.% of wheat flour, 1-10 wt.% of starch and 1-4 wt.% of refined slat with water in a blender to prepare dough; passing the dough through a roller; finely cutting the pressed dough in a regular thickness and length; drying noodle strips with a knife; drying prepared noodle strips until their water content becomes 14 wt.%; cutting dried noodles into a certain size and packing them.
