The present invention is for a method of chemically treating plant biomass w ith an enzyme system that retains function at low pH and high temperature. Enzym e preparations enriched in xylanase enzymes which retain activity in low pH an d high temperature are described. Such preparations may be utilized in a crude unpu rified form, and are especially useful in the production of pulp and paper.
