PROBLEM TO BE SOLVED: To provide a method for producing a substitute of potassium bromate, capable of substituting for an oxidizing agent of the potassium bromate, and containing an efficient amount of an ascorbic acid composition. SOLUTION: This substitute of the potassium bromate substantially contains the ascorbic acid, a food acid (an acid in a food such as a fruit) and/or a phosphoric acid salt. The substitute is the slow-acting oxidizing agent functioning through the whole production process. The substitute is also the oxidizing agent capable of producing a properly oxidized dough required for production of a high-quality yeast fermented product by using various kinds of methods in a baking process.
