PROBLEM TO BE SOLVED: To execute accurate temperature control without having to raise oil temperature abnormally, even in the case of a warped pan bottom or a small oil quantity, by determining the warpage of the pan bottom and the oil quantity in fried food cooking. SOLUTION: A control system of a temperature-raising means 9 and a temperature-adjusting means 11 is changed based on the warpage quantity of the pan bottom and the oil quantity, by using the warpage quantity of the pan determined by a warped pan determining means 8, and an oil quantity determining means 10 for determining the oil quantity from the difference between the estimated pan bottom temperature and the temperature measured by a temperature detection means 5, after estimating the heat capacity of the pan and the temperature of the pan bottom from a heat transfer equation. Therefore, the difference in the oil temperature caused by the magnitude of the oil quantity or overshoot at the temperature raising time can be suppressed, to thereby enable accurate fried food cooking, regardless of the quantity of oil. |
