The invention concerns a dairy ingredient derived from the soluble phase of milk, which contains soluble milk proteins, lactose, soluble milk cations and anions derived from mineral salts and organic acids, and water, and which is essentially free of fats and micellar casein. It comprises: total proteins: 10-80 %, preferably 15-30 %; mineral matters: 1.5 %; sodium: 0.02-0.4 %, preferably 0.1-0.3 %; potassium: 0.1-1.5 %, preferably 0.1-1.5 %; threonine: less than 6 g for 100 g of dosed amino acids; tryptophan: at least 1.8 g for 100 g of dosed amino acids. Advantageously, the casein content is less than 1 %, preferably less than 0.1 %, the fats content is less than 0.5 %, preferably less than 0.1 %, the calcium content 0.03-0.9 % and the chloride content 0.05-0.3 %. The invention also concerns a method for making said ingredient comprising the following steps: a) obtaining a soluble phase of milk; b) ultrafiltration of the soluble phase of milk; c) selective demineralization by nanofiltration of the ultrafiltration permeate; d) mixing the nanofiltration concentrate with the ultrafiltration concentrate from step b); and e) collecting the dairy ingredient. |
