The invention concerns a method for pulling out at least one piece from an accumulation of fat in the form of a layer found under the skin of the body - or part of the body - of a slaughtered animal, cut open and disembowelled, more particularly pork fat (PA), comprising the following successive steps: providing a gripping device (12) with mechanical gripping means (27) to be applied on an initial end part of the fat to be pulled out; actuating the gripping means (27) for clamping its jaws (30, 31) and consequently mechanically gripping the fat in its initial end part; relatively displacing the body of the animal and the gripping means (27) along a general direction and in a way such that the gripping means (27) reel off opposite the fat moving away from the initial end part, and subsequently pulling on the fat and tearing it off gradually from the body of the animal. The invention is characterised in that: an air differential pressure is locally applied to the fat (PA), before the jaws (30, 31) are clamped, for conditioning and shaping the fat such that the jaws (30, 31) can grip it firmly and properly; and with the jaws (30, 31), ensuring a positively efficient grip of the fat where it has been previously conditioned and shaped by the suction. |
