In the production of baked products, such as waffles, having fatty fillings or dressings containing ingredients such as cocoa, sugar, milk powder, flour, starch, and almond, vanilla and chocolate flavourings, the filling or dressing is prepared with a sub-cooled fat, i.e. a liquid fat cooled without solidifying to a temperature below that at which it normally solidifies, and is poured or spread while still in the sub-cooled condition. The pouring or spreading may be effected with the aid of air, or preferably an inert gas such as nitrogen. The fat is exemplified by a mixture of coconut and palm kernel oils. |
