PROBLEM TO BE SOLVED: To provide a method for producing L-aspartic acid by which the high-purity crystalline L-aspartic acid can be produced with an excellent operating efficiency without requiring complicated steps and further a liquid after obtaining crystals of the aspartic acid can be recycled as a raw material liquid without concentrating the liquid. SOLUTION: This method for producing the L-aspartic acid is characterized by adding fumaric acid in a molar amount of 0.4-0.8 based on the sum total of the fumaric acid and L-aspartic acid contained in a solution of ammonium L-aspartate, concentrating the resultant mixture solution under a reduced pressure, adjusting the concentration of the fumaric acid and L-aspartic acid to total 20 to <=40 wt.%, thereby depositing the L-aspartic acid from the solution in the method for making an aspartase act on a solution of diammonium fumarate, providing the solution of ammonium L-aspartate, adding the fumaric acid and then crystallizing the L-aspartic acid from the solution. |
