PROBLEM TO BE SOLVED: To provide an anaerobic digestion apparatus of an organic substance capable of achieving the miniaturization of a reaction tank, reducing heating energy and achieving a high biogas reovery. SOLUTION: The anaerobic digestion apparatus of the organic substance containing carbohydrate and protein is equipped with a first means (4) for mainly decomposing carbohydrate and a second means (5) provided to the rear stage of the first means to mainly perform the decomposition of the protein and methane fermentation. A means (2) for adjusting the (carbohydrate)/(protein) ratio (weight ratio) of the organic substance to be digested introduced into the first means (4) is preferably provided.
