<p>The invention concerns an ice confectionery product based on water ice having a soft core texture and comprising: i) a water ice core containing 32.5 to 40 wt. % of milk solids, overrun in a proportion of 30 to 50 % and whereof the texture is similar to that of an extruded ice cream and ii) a wafer protected against humidity at least on one of its contact surface with the water ice core, with a barrier layer and wherein the wafer is formed to constitute a mould containing said core.</p> |
