PROBLEM TO BE SOLVED: To provide the subject method for forming a uniform thin oil film on the surface of a baking plate for food such as confectionery or bread through spraying the plate with a release oil and capable of quickly and easily recovering an excess of the release oil. SOLUTION: This method comprises the following process: a masking plate 30 with an opening 31 is placed on the surface of a baking plate 20 for food such as confectionery or bread, and then sprayed with a release oil 61 to effect adsorption of the release oil as releasant to a portion 21 exposed from the opening, and the oil film 612 of the release oil formed on the masking plate 30 is recovered.
