PURPOSE:To stably keep a high-water-content emulsion in a water-in-oil emulsion condition and to obtain a emulsified oil and fat composition capable of satisfactorily eliminating defects such as exudation of water, oil-off, deterioration of shape retention by mixing and emulsifying an oil and fat composition containing mixed acid diglycerides having specified chain lengths with water phase. CONSTITUTION:An oil and fat composition (oil phase) containing mixed acid diglycerides having in a molecule carboxyl acid residues (formic acid, for instance) of which carbon number is 1-3 and unsaturated fatty acid residues (oleic acid, for instance) of which carbon number is 12-24 is mixed and emulsified with water phase essentially consisting of water. Thus obtained emulsified oil and fat composition has an effect to stably keep a high-water-content emulsion in a water-in-oil type emulsion condition, therefore, the defects such as exudation of water therefrom, oil-off, deterioration of shape retention thereof occurred in conventional compositions can be satisfactorily eliminated. |
