PURPOSE:To provide a new heat-stable mannose isomerase, its production process and a process for producing mannose using the isomerase. CONSTITUTION:A new heat-stable mannose isomerase produced by Pseudomonas sp. N-25 strain, having excellent thermal stability, capable of converting fructose into mannose at 60 deg.C and enabling the reaction at pH6-7. Accordingly, mannose having high purity can be produced in high yield without causing the microbial contamination during the reaction while effectively utilizing the enzyme and suppressing side reactions. |
