PROBLEM TO BE SOLVED: To provide a method for producing tofu (bean curd) on a bamboo-plate, capable of inhibiting drippings from the bean curd package at its shipping stage. SOLUTION: This method for producing the bean curd on a bamboo-plate comprises the following steps: airtightly packaging whole of a piece of bean curd 2 dished up on a bamboo plate 1 with a plastic film 3 (S210); putting the entire airtightly packaged coagulum 2 with the bamboo plate 1 into cooling water so that drippings are produced from the coagulum 2 due to its own weight after the time of airtightly packaging process to be kept in the packaging plastic film 3; in the cooling process, condensing evaporated water on the inner surface of the package to be kept as drippings in the package; after quickly cooled with cooling water, storing the bamboo-plate packaged coagulum together with the bamboo-plate 1 in a refrigerator (S230), and thereafter, taking the bamboo-plate packaged coagulum out of the refrigerator and unpackaging it to separate the coagulum 2 dished up on the bamboo plate 1 from the drippings (S250); and preparing a container 4 other than the packaging plastic film 3 and encasing the whole bamboo-plate packaged coagulum 2 dished up on the bamboo-plate in the prepared container 4, and then sealing an opening of the container 4 with a top film 5 to package it again (S260). |
