<p>A yeast extract is produced by using a Saccharomyces cerevisiae strain which can contain 1% by weight or more of η-glutamylcysteine in the logarithmic growth phase and contains from 0.004 to 0.1% by weight of glutathione when cultured in a medium wherein a glutathione synthase-lacking strain of S. cerevisiae grows more slowly than wild-type S. cerevisiae (for example, an S. cerevisiae strain lacking the C-terminal domain following Arg at the 370-position of glutathione synthase encoded by glutathione synthase gene at the chromosome).</p> |
