PROBLEM TO BE SOLVED: To provide a cereal processed food improved in disaggregation without spoiling its appearance, taste and palate feeling. SOLUTION: This cereal processed food improved in disaggregation is obtained by adding 0.05-1 unit of a naturally derived lipase based on 1 g of raw material flour, and then adding at least one kind selected from thickening polysaccharides, dietary fibers and calcium to the resultant. The second objective method for producing the cereal processed food is provided as described above. The 3rd objective disaggregation improver for cereal processed food contains a naturally derived lipase as an active ingredient, and comprises at least one kind selected from thickening polysaccharides, dietary fibers and calcium as another active ingredient. |
