PROBLEM TO BE SOLVED: To obtain a quality-improving composition for rice cake, capable of improving the palate feeling of rice cake without spoiling the flavor inherent in the rice cake, and capable of inhibiting rice cake from being stiffened due to its aging during storage, and to provide a method for producing rice cake characterized by comprising addition of the quality-improved composition to rice cake. SOLUTION: This quality-improving composition for rice cake is obtained by including a galactomannan decomposition product. |
