PROBLEM TO BE SOLVED: To provide a method for producing natto (fermented soybeans) packed in a pouch capable of smoothly fermenting steamed beans by Bacillus natto even when steamed beans, cultured Bacillus natto and a dripping are enclosed in a non-water permeable pouch comprising a flexible synthetic resin film having air permeability. SOLUTION: This method for producing natto packed in a pouch is to hold a non-water permeable pouch 1 divided into a lower layer pocket 11 having a smaller volume and an upper layer natto-holding part 10 having a larger volume through an isolation seal part having a narrow water channel 12a in a part and having an opening 13 in the upper part in an appropriate state in which the pocket 11 locates lower than the natto-holding part 10, introduce a dripping 3 into the aforesaid pocket 11, put appropriate amount of steamed beans 2 into the aforesaid natto-holding part 10, add Bacillus natto to the steamed beans, seal the opening 13 of the aforesaid pouch 1 and ferment the aforesaid steamed beans. |
