Oil-in-water nanoemulsions in which the oil droplets have a particle size below 100nm, preferably 20 - 80nm, having (1) at least one amphiphilic lipid (nonionic, anionic, or a mixture of these, the anionic lipids being selected from fatty acid or alcohol mixed esters, glycerol carboxylic acid esters, alkylether citrates, alkenyl succinates, phosphoric acid fatty esters, and their mixtures), and (2) an anionic polymer having at least one hydrophobic chain, the weight ratio of oily phase to amphiphilic lipid being 1.2 - 10, especially 2 - 6.
