PROBLEM TO BE SOLVED: To obtain a dried meat product capable of easily being processed, having good palatability, a good balance of flavor and taste with a spice or salt and causing a favorable taste imparting stronger deliciousness and extracting moderate pungency when repeatedly eaten. SOLUTION: This dried meat product contains a sugar alcohol in an amount of 0.5-1.4 pts.wt. based on 1 pt.wt. of the salt. Erythritol is used as the sugar alcohol in a preferable embodiment. |
